From a nutritional standpoint, ancient Sicilian durum wheat varieties Perciasacchi and Russello have important health characteristics as they have not undergone genetic alterations. In fact, apart from being less refined, these grains naturally have a lower glycemic index and gluten content compared to other wheat varieties. This makes it possible to incorporate them into low-calorie and gluten-free diets.
